What to do. What to do

This is not really a recipe, but more an idea to have something on hand when you are tempted to fix something unhealthy because, let’s just face it, it is easier to fix something unhealthy.

Get a package of chicken breast (frozen or fresh)

Put them in a crockpot with some warm water (about 1 1/2 c) and sprinkle them with salt and pepper.

Set on High for two hours then cook on low for the rest of the day.

You can shred this chicken very easily. Freeze it in portions, so that when you need a quick meal the chicken is already cooked. You can also use the broth for soup and other dishes.

This works great for me because I have chicken phobia. I hate handling chicken. This way I can just dump it from bag to bowl with out having to touch it. I am saving soooooo many clorox wipes this way.

I got this idea from Kim at coffeeandamuffin.blogspot.com .

  1. Good idea. I do the same thing with beef, but haven’t tried it yet with chicken for some reason. Duh….

  3. I stumbled over her blog a few months back. She has lots of good ideas and seems to be a very good example of a virtuous woman. She seems to have more energy in her big toe then I do in my entire body. Or maybe she is just industrious while I wait for the spirit to move me.
