I am currently working toward some of my dreams. Dan and I are starting to gear up for some summer hiking and camping trips. One of our goals as a family is to become overnight backpackers and hikers. We have been reading and researching about equipment and food on the trail and such. With our boy scout and cub scout and soon to be little cub scout in a few years we are a real scouting family and it is about time I get in on the hiking and camping with them. Our daughter runs circles around us, too, and is a slender little fit gazelle. I used to be… (sigh)
Dan and I have plans to backpack across the British Isles or at least Ireland someday and flyfish all the rivers along the way. We would love to travel to other European countries and bike or hike around and sight see (Italy, France, Spain, etc…). That is certainly long term and very big for us.
Another dream I have is to take my culinary education on the road and study overseas for a stint. I have been dreaming over culinary schools in Italy, France and Ireland lately when I do get online. I would LOVE to have that opportunity. That is a HUGE longshot unless I win a trip somehow.
I do want to do some smaller things like running a 5K and 10K again in the near future. I have to get back to regular exercise if I am going to do that. My schedule has been nuts and I have been having some hormonal issues that I will be addressing with my doctor soon. My energy level is ZERO! Dan and I are both going strict again. We have had too many slack habits since Christmas and we need to get back to a stringent eating routine and regular exercise. My problem is not eating enough most days and I know it.
So, I have about four months to get in shape for our first overnight backpacking trip. I want to be a sleek backpacking momma!!! LOL
That would be so cool — ours are still a little young to attack overnighting it yet. But I do want to get out and camp this summer!!

Camping is one of my favorite things! Unfortunately, my husband is more the indoors, sit at the computer type. He’s not big on camping. But I’m working on him!

wow, that is a great dream. We love to camp, but we’ve never backpacked as a family. perhaps someday I can do that too!

Oh, and Maria, I think I spent my first six summers in a tent. Or pretty close to most of it anyway! My parents has us camping out as teeny, tiny, infants. My oldest two kiddos went on their first camping trips before their first birthdays!

We have taken all our little ones up to camp before they were a year old. It is a way of life with us. Hiking is a different thing… We have had to wear the little ones on our back to hike up a mountain and it is not easy but so much fun when they see all the beauty and get to run in a field of wildflowers once we get to the top. Dan is usually the one who hauls them on his back, though. They are all too heavy for me because they are usually over 20 pounds by the time they are a year old. I have big boys!!! LOL
As for overnighting… we would leave the littlest one with Grandma back in camp for the night. I know the two year old is a bit little for such a cold night at the top of a mountain.

What a great thing to do as a family Leann!! I’m so excited for you. And to study abroad…how cool would that be!! Erik and I would like to go overseas for a visit also.
