Chow Down! (Blest)

Here’s what I ate today.  It’s a little different from my standard menu from weeks gone by for two reasons.  1. I’m out of my precious Oatmeal Muffins and must make more!  2. It’s too hot to eat beans and Rotel Tomatoes.  Enter salad season!So without further ado….

Breakfast:

  •  1/2 Cup whole oats cooked with hot water
  • 1 cup 1% milk

Snack:

  • About 10 mixed nuts from the Planters Nutrition Mix
  • 2 Tbsps Roasted Edamame with Wasabi

Lunch:

  • Turkey Roll-up: Whole Wheat Tortilla spread with homemade Black Bean Dip and 1 Tbsp light Sour Cream. Three slices deli turkey
  • 1 yellow bell pepper
  • 1 square seriously good dark chocolate

Snack:

  • 1 Pink lady apple
  • 1 cup 1% milk

Dinner:

  • Salmon with creamy lemon sauce (Oh yeah baby! Recipe forthcoming)
  • Steamed Broccoli and Asparagus with a sprinkle of lemon juice and freshly grated Asiago Cheese

Special Occasion Dessert: 1 of CJ’s Oatmeal Cookies (special occasion being that my husband is back after a three week absence and we are going to the Mall on a  mission. The kids will get cookies at the Cookie Place. I will get a Starbucks to go with my oatmeal cookie which will be tucked in my purse! :razz: )

Total Calories as best as I can estimate: 1618

  3. Yep. And it’s psychotically thick and chewy. I have texture issues, after all. Mushy foods gross me out. So I use about 1/4 of the water a normal human would use when I make oatmeal.

    Now I used to make some really yummy oatmeal with skim milk, apple juice, cinnamon, and vanilla - but of course that would be a Phase 3 recipe because of the juice…
