I need no incentive to eat breakfast, never have. That has never been a problem for me. Lunch can be a different story, but we are talking about breakfast here. I am in need on some ideas for breakfast that don’t involve a ton of carbs — some are okay. But are also quick and easy to fix. Or at least heat up in the microwave or toaster oven. If I can keep the carb count down early in the day it is easier for me later in the day.

Off the top of my head, Maria:
~hard-boiled eggs and piece of fruit
~yogurt and fruit parfait
~ turkey-ham and egg on a whole wheat bagel or english muffin (you can make these in batches and freeze them)
~breakfast burrito with eggs, tomatoes, peppers, etc. in a small tortilla (also can be made ahead and frozen)
~dump omelette: filled with leftover bits of meat, cheese, veggies
~yogurt or cottage cheese with a handful of nuts (for energy)
~made ahead quiche

Oh, I also have a recipe for whole wheat pancakes if you’re interested (dunno if that is too many carbs for you though). I had blueberries, apples, or bananas, or nuts to them too, to make them denser and more “action packed”. I make up a batch a couple of times a month and freeze them. (Can you tell I love my freezer?) Then pop a couple in the microwave and in a minute, there’s breakfast. Yum!

Also, I’m going to try a oat and wheat muffin recipe in a day or two. If it’s good, I’ll post it! You can freeze muffins and just micro them when needed…

One more! What about a smoothie? I personally don’t care for my food to be liquified, but they are all the rage in some circles. There are lots of recipes out there on the web.

Two “on the go” things I do when I don’t have much time is smoothies, too.
I put one up at my food blog the other day with blueberries, orange juice concentrate, banana, yogurt and milk.
Another I use you have in the WAH cookbook we did. Check that, too, because I remember some good ideas there.
I will get you a list of some things we do, too, just give me a bit and I will pass it along.

The key, I think, is to think outside the box for breakfast and don’t be afraid to eat chicken in your omelette or eat steak or other meats for breakfast besides the fatty sausages and bacon that are traditional.
