CJ, I never officially “signed on” but I have been trying hard to stick to this challenge this week. Thanks a bunch for the motivation!

I often have the recipe below for breakfast when my thyroid is sluggish, and was pleased to discover that just one serving has 5 servings of vegatables! If you like asian food - you’ll love this (I got it from the South Beach cookbook and made a few mods).

Tofu scramble (1 servimg):

1 tsp olive oil
1 tblsp garlic, chopped
1 cup onions, diced
1 cup bell peppers, diced
1 cup extra firm tofu, cubed
1 cup mushrooms, sliced
1 tsp Bragg Liquid Amino (EXCELLENT soy sauce substitute)

In small skillet, saute garlic, onions and bell peppers in olive oil until aromatic. Add mushrooms, cooking just until they begin to release liquid. Add tofu and stir fry for a few minutes. Add liquid amino and heat through.

Going well! Surprisingly, I naturally eat at least five servings of veggies a day and drink close to a gallon of water. I have gotten the exercise going now (5 times this week!) and snacking is greatly diminished, but not gone
