Trying a new dish tonight (Kellie)

So tonight I am trying a new dish for dinner. On Sunday’s and Tuesday’s my family goes to a friends house and uses her huge in ground pool every summer. She is a wonderful single friend in her late 40’s who hates to see the pool not be used. My family is more than happy to help her out! This year we would like to always go with Eric (hubby) and so we will be including dinner by the pool. Now keeping with our healthy theme I do not want to be picking something up on the way, nor do I want it to be so complicated that I am doing tones of prep and clean up there. SO tonight I am taking roasted shrimp in veggies and orzo. It sounds yummy and very easy to transport. The recipe also says it is delicious hot, cold, or room temperature. I will let you all know. Does anyone have any other quick, easy, and healthy ideas?

I sometimes think you make these names up. First jicama which I at least know what it is. But have not seen it anywhere actually haven’t looked yet.
Now orzo?

Orzo is a type of pasta, it is small and shaped like rice but is actually pasta. I promise I did not make it up, I went to the pasta aisle and picked up the package of orzo. It was actually very yummy!

Thanks Kellie. Actually I googled it after posting and discovered it is pasta in the US but the word actually means barley in Italian. Weird. Haven’t seen it in UK but then we (our family)don’t do pasta much as my husband needs gluten free.
