Really, what is "normal?" (Anne)

I’ve been putting off doing the calorie-counting challenge all week because it’s been kind of an odd week. I haven’t had a “normal” day of eating, yet! (As in, a fully “on-plan” day). I’ve eaten out too much and haven’t had enough fruits and veggies… and I don’t feel good for it. Anyway, Friday was the closest to a “normal” day for me this week, so I’m posting its menu and calorie count. I had to guesstimate at a calorie count for my dinner items because I ate out. And yes, I know that I didn’t get enough fruits/veggies in yesterday. My body’s screaming at me today for that…

breakfast (total — 410):
oatmeal (3/4 c dry, cooked in water) + 1 Tsp flaxseed meal + cinnamon + 1 tsp brown sugar
vanilla (1pump) latte (skim milk, 12 oz)

lunch/snacks (total — 435):
apple
turkey chili (homemade, lean ground turkey, tomatoes, tomato sauce, black beans, pinto beans, dark red kidney beans) + 2% cheese (small handful? prob 1/2 serving)
banana
tea + sugar

dinner (total — 800):
pulled chicken (4-5 oz)
small side of mac & cheese + piece of cornbread
decaf skim raspberry mocha

total for the day: 1645… but not enough of the stuff my body needs. I’ve decided that I need to figure out good ways to incorporate vegetables into my lunch. Fruit is so easy and portable but I need more vegetables (I do typically eat two servings at dinner) in the middle of the day to balance me more. If you have any suggestions (that don’t involve a salad; I don’t really love salads), lay them on me!

  1. Snow peas. They are great alone, or with a dip (dressing, hummus). Yummeh! Also, baby carrots are good and easy for middle of the day or snacks. Cherry or grape tomatoes or cucumbers…..I like all of these!

    My mother bags up fresh broccoli and cauliflower and eats as snacks or for a quick lunch with dressing. She bags up a weeks worth on the weekends so she can just grab a bag as she leaves the house. Too easy!

  2. Yeah, i was gonna say have a small amount of dip (like hummus) and then have things like bell pepper, carrot, mushroom (did you know you could eat that raw?!), sugarsnap peas, tomatoes. Sort of like salad, but not, if you get what i mean!
