What I ate on Wednesday

I don’t do calorie counting, it’s just too complicated. I think it only really works if you eat lots of pre-packaged food or you’re a whizz with look-up tables and a calculator.

Breakfast: porridge (made with skimmed milk and oats with added wheat bran) with pecan nuts and blueberries. Variations on porridge are my standard breakfast at the moment.

Morning snack: reduced fat guacamole and celery. The guacamole was shop bought and I didn’t really like it, I prefer home-made. Usually I have hummous for my snack.

Lunch: salad (romaine lettuce leaves, chicken, cherry tomatoes, yellow pepper, pistachio nuts, guacamole) I like salad, I eat it every day for lunch with different things in. Sometimes I have a bulgar wheat or quinoa based salad.

Afternoon snack: cashew nuts 15, I counted them out!

Dinner: Coconut chickenBengali red dalaubergine curry and mange tout. I love cooking, but I don’t get to do it as much as I like. This was my first evening eating at home this week, so I had fun cooking up a storm and making a mess (which I cleared up afterwards, obviously).

Dessert: Low fat yoghurt with frozen banana and oatmeal. I looked in the freezer and found some left over oatmeal cookies and a banana I froze in slices. I mixed about 1/3 of a banana with crumbled cookie and a couple of spoonfulls of yoghurt. it was delicious! If you’re missing ice-cream, I recommend frozen banana, it’s gorgeous.

  1. Hey Bekki you could try to count calories. Other people have. It’s only one time. Appreciate you are having a busy week though. Hope it is going ok.

  2. OK, since my mummy made me, I looked it all up, did a bit of guess work and make it 1603 calories. Which is about right, isn’t it blest? The main reason I don’t like counting calories is it gives me something else to worry about.
